A soft cheese made from sheep's milk, primarily made in Central and Eastern Europe.
Origin
Borrowed from Slovak bryndza, from Romanian brânză ("cheese"), of uncertain origin; it was possibly borrowed from Albanian brëndës ("intestines"). Originally referred to cheeses prepared in a sheep's stomach by reacting with the rennet inside.
